Instructions:

  • Add the vinegar, wine and tarragon to a small sauce pan and bring to a simmer over medium-high heat. Allow to reduce until you are left with about 2 tbsp of liquid. It should take around 15 minutes.

  • Pour the reduced vinegar into a glass measuring cup (tight enough to just fit an immersion blender head). Add the salt and egg yolks. Set aside.

  • Add the butter to a small saucepan and melt over medium heat. Once fully melted, swirl around to let any foam subside.

  • Place the immersion blender into the bottom of the measuring cup and blend. As you continue to blend slowly pour in the butter until you have achieved a thick, creamy sauce. This should be a fairly quick process (less than a minute).

  • Serve immediately with meat and veggies.

Steak and Veggies

  • Preheat the grill for 10 minutes on high heat.

  • Salt and pepper both sides of the steak and allow to sit for 3 minutes.

  • Once the grill is preheated, place the steak on the grill and close the grill. Cook for 3-5 minutes on each side, depending on your preferred doneness.

  • Toss the veggies in salt, pepper and olive oil and place in a small 6 inch skillet. Place skillet directly onto the grill and cook until preferred doneness.

  • Serve the steak and veggies with the burnoose sauce and enjoy!

FAQs

What are the ingredients of bearnaise sauce? ›

Béarnaise sauce is a piquant child of hollandaise, one of the so-called mother sauces of French cuisine. It is simply an emulsification — egg yolks and butter cut through with vinegar flavored with tarragon and shallots, with a bite of black pepper.

What goes well with bearnaise sauce? ›

Béarnaise sauce is commonly paired with grilled fish or steak, but it's just as delicious on roasted vegetables or eggs Benedict. Spoon this silky, herby sauce over roasted asparagus, steamed broccoli, or grilled mushrooms for a sophisticated dinner party side.

How do you thicken a bearnaise sauce? ›

Notes. If your béarnaise is thin and runny, transfer to a large bowl set over a pot of barely simmering water. Whisk constantly and vigorously until sauce is thickened.

How long does bearnaise sauce last in the fridge? ›

Béarnaise Sauce is best used immediately. If you must, you can refrigerate it for up to 2 days and reconstitute it. It will become solid in the fridge. Break it up into pieces and reheat it, whisking constantly and vigorously over low heat and sliding the saucepan off the burner if it seems to be melting too quickly.

What is a substitute for butter in bearnaise sauce? ›

Whisk egg yolks, black pepper, tarragon Dijon mustard, tarragon vinegar, water, and salt in a metal mixing bowl or small saucepan. Place over low heat and whisk until mixture foams, small wisps of steam appear from the sauce, and sauce is hot and thick, 1 to 2 minutes.

What is the difference between hollandaise and bearnaise sauce? ›

Béarnaise sauce is an evolution of hollandaise, with added tarragon and shallots. MasterClass reports that hollandaise sauce consists of egg yolk "emulsified with unsalted butter and acid." What makes bearnaise sauce break? ›

Heat can cook the egg yolk and break the emulsion as could mixing the ingredients in the wrong order. We can call this “breaking” curdling. Straining and whisking in a little warm egg yolk might re-emulsify. Whisking or blending alone may help for sauces that have been sitting for awhile.

Why did my bearnaise sauce break? ›

A broken sauce is generally caused by the separation of sauces into two components: a watery liquid and an oily film on top. This happens when there's too much fat or liquid in the mixture. This can happen when there are not enough emulsifiers (which help keep your ingredients together).

What are the 5 mother sauces? ›

The five French mother sauces are béchamel, velouté, espagnole, hollandaise, and tomato.
